    • Preheat the oven to 325°F (165°C). Remove the turkey from the brine and rinse well. Pat it dry.
    • Rub softened butter under and over the skin of the turkey. Drizzle olive oil on top. Season with salt and pepper.
  3. Roast the Turkey:

    • Place the onion, carrots, and celery in the bottom of a roasting pan. Set the turkey on a rack above the vegetables.
    • Roast the turkey, basting every 30 minutes, until the internal temperature reaches 165°F in the thickest part of the breast. This should take about 15 minutes per pound.
    • Rest the turkey for 20 minutes before carving.
