And if you ask me what kind? Oh, it’s chocolate cake—plain, rich, decadent chocolate—with chocolate cream cheese frosting piled high. Lots of it. Forget the sprinkles, skip the fruit; just give me chocolate on chocolate, and we’re golden.

Since November 26th is National Cake Day, it’s the perfect excuse to talk about this heavenly creation. Did you know cake dates back to ancient Egypt? Of course, back then, they didn’t have the magic of chocolate, but thankfully, we’ve evolved.

But while you think about that, let me share something truly special—my favorite chocolate cake recipe. It’s moist, rich, and topped with the silkiest chocolate cream cheese frosting you’ll ever taste. Ready to bake? Let’s do it!

Nathan’s Favorite Chocolate Cake Recipe

Ingredients

For the Cake:

  • 2 cups granulated sugar
  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Chocolate Cream Cheese Frosting:

  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 1 cup unsweetened cocoa powder
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 4-6 tbsp heavy cream

Instructions

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine sugar, flour, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Mix until smooth.
  4. Stir in boiling water (batter will be thin, but don’t worry!).
  5. Pour batter evenly into prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

For the Frosting:

  1. In a large bowl, beat cream cheese and butter until creamy.
  2. Sift in cocoa powder and powdered sugar, mixing until smooth.
  3. Add vanilla and heavy cream, one tablespoon at a time, until you reach your desired consistency.

To Assemble:
Spread a generous layer of frosting between the cake layers, then coat the top and sides. Don’t skimp on the frosting—this is National Cake Day, after all!
